Ingredients

  • 1/4 teaspoon bicarbonate of soda
  • 2 tablespoons boiling water
  • 150g butter
  • 1/2 cup caster sugar

Steps

  1. Preheat oven to 200C. Line 3 large baking trays with baking paper.
  2. Place the date, bicarbonate of soda and boiling water in a medium heatproof bowl.
  3. Meanwhile, use an electric mixer to beat the butter and combined sugar in a large bowl until pale and creamy.
  4. Stir in flour, cinnamon, oats and date mixture. Press tablespoonfuls of mixture together and place on prepared trays, about 3cm apart.
